the great mary jane.

Something safe like aloe vera.

Rosemary – on roast pork
Mint – but be careful as very invasive
Parsley – improves just about everything
borage
Oregano – pizzas will never be the same
Thyme
Coriander – fantastic with tomatoes
Sage – excellent in stuffing for chicken
Tarragon – again, great with chicken, and also fish
Dill – fish
Fennel – beautiful plant – choose the bronze one – can replace dill,

Enjoy yourself. Some, like oregano and thyme are low lying. http://thyme2.typepad.com/thyme_for_cooking_/2007/04/i_remember_when.html Rosemary makes a great low hedge or border. http://www.capemay.com/Editorial/february09/gardening.html Fennel is beautiful to look at, feathery and so pretty http://www.cottage-gardens.net/showdetails.asp?id=173

I don’t know what kind of herbs you use on a regular basis but a couple good standbys are Echinacea (Purple coneflower) , Aloe Vera, Comfrey (Russian is not invasive).
